I know how hard it is to find easy, quick and family-friendly recipes so I thought I’ll start sharing our family’s favourite midweek dinners. I don’t really do fancy cooking, but I do love hearty, one-pot kind of dishes.
This Salmon & Pea- Pasta is super easy to make, and even easier to amend. It’s one of those dishes where you can use whatever vegetables you happen to have and use those instead of peas. I don’t actually ever measure the quantities, as it doesn’t really matter for the end result, but this gives you an idea of the proportions.

- Bag of pasta (500g)
- 1 chopped onion
- Oil for frying
- 100-200 g Frozen peas/green beans
- 100 g Salmon – cooked, smoked or gravad
- 200 ml Oat cream/sour cream/single cream
- 50 ml Fish/veggie stock
- 50 g Grated cheese – I used Parmesan but pecorino or even cheddar would work fine too
- Fresh oregano & basil (or dried)
- Salt & pepper to taste
Boil the pasta in salted water. Whilst the pasta is cooking, prepare the sauce in a separate pan.
Fry the onions until they are soft, add the peas and/or any other chopped veggies and fish stock to cook the veggies. Add the salmon and cream, stir in some cheese and salt&pepper to taste. Drain the pasta and combine with the sauce, garnish with chopped oregano & basil. Add some extra cheese too!
